Creamy Vanilla Yogurt - just like store-bought!

So, for a while I have been trying to make a yogurt that I like. First of all, I'm not a huge fan of yogurt, and have a sweet tooth and only like the creamy sweet yogurt. Following some other recipes, I have found the yogurt to still be too tart for my palate... until today! :)


Tweaking a few different recipes I sourced off the internet, I finally have stumbled across what has come closest to a store-bought yogurt.

TIPS:

* After mixing the milk for 30 mins, it is essential to remove the lid from the TM bowl and place in the fridge... if you leave it on there will be too much waste when it comes to removing the 'skin' from the top of the bowl. It basically won't cool quick enough if you leave the lid on.

* Leave mixture in fridge for 1 hour, place TM bowl in Thermomix - if the temperature is above 37 degrees, place it back in fridge for a few minutes (my fridge usually has milk at 45 degrees after 1 hour... I need a further 15-25 minutes for the temperature to come to 37 degrees (celcius)). This will depend on how cold you have your fridge, but getting the milk to exactly 37 degrees is important, make sure you keep an eye on this. Check on it every 5 minutes until you find it is at 37 degrees.



First time I ate it, I crumbled some home made anzac biscuit on top, and it was lovely. Next time I am looking forward to putting some fresh fruit through it! :D



CREAMY VANILLA YOGURT
Makes 1 litre

1 litre of milk (I use the Manning Valley Full Cream Milk - available from Woolworths... it has the cream plug on top, just like it used to be when I was a kid!)

50g Full cream milk powder

80g raw sugar

105g thickened cream

15g vanilla extract

120g natural yogurt (I used Greek Yogurt, with min. of 1.8% fat) for culture.

METHOD

Add 1 litre of milk to TM bowl, add 50g powdered milk, 80g raw sugar and 15g vanilla extract. Mix for 30min/90degree/sp3.

Remove lid and place TM bowl in fridge, for approx 1 hour, until mixture is 37 degrees. (SEE ABOVE TIPS FOR THIS SECTION!)

When milk has reached 37 degrees, add 120g greek yogurt. Mix 4sec/sp4.

Cook mixture again 20 mins/37 degrees/sp3.

Approx 10 mins before thermomix finishes previous step, boil a full kettle of water. Place in Thermoserver to prepare bowl. Also get some thick towels or blankets and lie on bench to place Thermoserver into when ready. Empty thermoserver when there is only 30 seconds left on previous step. Quickly dry thermoserver.

Place milk mixture into thermoserver. Wrap thermoserver in towels or thick blanket and leave in a warm place. (My sun room when locked up is a great place, but in an oven is another great option).

Leave for 7 hours before opening, putting into a new container and placing in the fridge. Allow to cool for 3 more hours, and enjoy!
