Scones - light, fluffy, and delightful!
Tried my first attempt at scones using the thermomix today. I used a combination of recipes (one from the recipe community, combined with the Country Women's Association recipe). The result was nothing short of the most mouth-watering scones I have had in a long time! I look forward to making them again (though next time I will whip up a batch of home made strawberry jam to accompany it!).
SCONES (makes approx. 9 scones).
INGREDIENTS
400 grams of self raising flour (sifted)
20 grams butter
1 tsp baking powder
30 grams icing sugar
1 egg
125 ml cream
125 ml full cream milk
METHOD:
Pre-heat oven to 220 degrees (celcius).
Add flour and butter to TM bowl. 8-10 Sec/ Sp9 - repeat this process until butter integrates with the flour until the consistency is similar to bread crumbs.
Add baking powder, icing sugar, egg, milk and cream. 8 Sec/Sp4 to combine lightly.
Knead for 30 seconds.
Flour bench or mat and turn out dough. Lightly flour top of dough and roll out to approx 3 cm thick, flour a circular cutter (or tea cup) and cut out dough.
Place on baking tray lined with baking paper. Place first scone in centre of tray. Place other scones around this one, so that they are touching (this will allow them to rise evenly).
Brush tops of scones with milk and cook for approx 10-15 minutes until golden brown (turning tray half way through cooking time).
Remove from oven and leave for 5 mins before placing onto wire rack.
Serve hot with jam and cream, or wait until cooled and store by wrapping them in a clean tea towel.
